I guess You'll be targeting CS students, By using OSS they'll be able to know how things work, Not just using the technology.
By using OSS frameworks they'll know how to interact with the community and they'll have a hands on experience on how the software development cycle works.
Imagine people looking at the source code for an interpreter such as php ? This is learning.
